with 4.10s at 75mph you'd be looking at about 2500rpms and at 65. I bet once you put the 3.73's in and then jump into a car with 4.10s your going to hate your choice. Dont fear the gear. I daily drove 4.10s for 2 years traveling 30 miles round trip to work and did another year traveling with 4.30s. Trips to the track were 2 and a half to 4 hours depending which track i went to. I wouldn't recommenced 4.30s unless your serious and know what direction your going with the car. Around town 4.10 also become nice at 45 you can actually throw it into 5th and drive with it that way no issues

Do the 3.90 in the GT. Hell, I run 4.10s in my Mach that's a DD. As the saying goes that I've taken from others, Don't fear the gear. Hell, if I did it again I'd probably even go 4.30s in my car.

I just did 3.73 but have not driven it yet to be able to recommend it to you. If you need a good shop to do the work for you send me a PM. It will be the cheapest around, honest guy and very reputable.
